How to Make Perfect Fluffy and Creamy Hummus

Serves: 20-25

Time: 30min

Ingredients

3 cans garbanzo beans

1 tsp baking soda

¾ cup lemon juice

3 garlic cloves, coarsely chopped

1 ½ tsp Himalayan salt

1 ½ cup quality tahini paste

½ cup cold water

1 ½ tsp cumin

3 Tbsp olive oil

Toppings: radishes, olives, pine nut seeds, dill, za’atar spice, olive oil

Tools: large capacity food processor

  1. Place the garbanzo beans in a medium size pan and add enough water to cover them by a couple of inches. Add the baking soda, stir and bring to boil. Boil for 20 minutes, then drain and let cool down.

  2. While boiling the garbanzo beans, in a food processor add the lemon, chopped garlic and salt and process until the garlic is finely minced. Then let rest for 15 minutes.

  3. Add the tahini paste in the food processor and blend until creamy mixture. While the processor is running, slowly drizzle the ice cold water until the texture is smooth.

  4. Add the garbanzo beans and cumin and process for 2-3 minutes, while drizzling the olive oil in, until smooth and fluffy texture.

  5. Taste and adjust flavor and texture. Add more water if the hummus is too thick.

  6. Scrape the hummus into a serving platter, arrange the toppings and lastly drizzle with olive oil.
